Under new management

A new era in Cap d’Antibes

The famous Cap d’Antibes culinary institution Restaurant de Bacon was taken over in 2019 by business partners Roland Le Calvez and Christophe Caucino. They brought with them the fabulously charismatic chef Luigi Frascella. If you asked a child to describe a quintessentially  Italian chef I think Luigi  would be exactly how they would imagine him to look. Luigi Frascelli is instantly likeable. Peter Sellers’ inspector Clouseau instantly came to mind when I first saw him, with an infectios Italian accent and warm smiling eyes.

Roland and Luigi invited me to lunch recently where Luigi presented me with a taster menu of the new dishes he has created for the 2020 menu. Roland Le Calvez is no stranger to the area and is more than familiar with the history of this once Michelin starred fish restaurant. He has been coming here for years. Discussing the restaurants future he was keen to point out that of course there are plans to modernise it however they are doing this sympathetically and over time.

The menu will be re worked and new dishes introduced. The building itself will also be re designed however the essence of the original restaurant and it’s history will be preserved and respected.

One of the new dishes already on the menu is the Risotto Bacon. Historically the most famous dish here was the Bacon Bouillabaise. People came from all over the world to taste it. Luigi has re worked this traditional Provençal fish stew to create the Risotto Bacon. The risotto uses all the elements of the original dish but presents them with a Luigi twist. Super Yum! and highly recommended by Moi.

Luigi also wants to introduce an open kitchen. Both he and Roland feel the back of the restaurant is wasted at the moment. They would like to better utilise the whole space and incorporate a chefs table too. Until now the kitchen and talent within it were hidden away. The chef and his team weren’t seen or heard.  To be honest Luigi is, for me, such an essential part The Bacons future that it would be criminal to have him hidden away. He is so full of life and extremely passionate about making this place a success that he needs to be front of house.

I always felt that the Bacon needed a bit of new life in it, Luigi will certainly bring it that.

 

Why not pop along and try out the new Business lunch menu it’s one of the new ideas Roland and Luigi have already put in place. Available Monday to Friday and a snip at 37.00 Euros per person. Seriously I could spend that on lunch in a very average beach restaurant. This really is a bargin.

Renovation of the restaurant will begin late 2020. The new look Restaurant de Bacon will open it’s doors early 2021. I’m super excited to see how it turns out.
